Peach Chardonnay Granita
Adult wine slushy, why not? This granita is great served as dessert or a cocktail on a hot day. The best part about it is you won't need to breakout the blender! All you need is a fork and a few hours. Mix the ingredients together at lunch and by 5 o'clock you have a refreshing cocktail ready to be served.
PEACH CHARDONNAY GRANITA
Ingredients:
- 3/4 cup water
- 3/4 cup sugar
- small bunch of mint leaves (about 1/4 cup packed)
- 1 cup peach puree or nectar
- 2 cups chardonnay
- 3 tablespoons lime juice
Instructions:
Mix sugar, mint leaves, and water together in a small sauce pan. Heat over medium high heat just until the sugar dissolves. Then, remove from heat, let sit to cool, and steep for 30 minutes. If you allow the mixture to boil, it will become bitter.
After steeping, strain the mint leaves and discard. Add the mixture to a shallow freezer proof dish such as a glass or metal 9 by 13 baking dish. Mix in the remaining 3 ingredients and place in the freezer. After 30 minutes, scrape the mixture with a fork moving any ice crystals from the edges to the middle and breaking up any large pieces. Continue to scrape every 30 minutes until the mixture is fully frozen (about 3-4 hours).
