Vegan Naughty Malted Chocolate Banana Nice Cream Milkshake with Toasted Marshmallow and Shoestring Fries

Naughty Malted Milk Chocolate Banana Nice Cream Milkshake with Toasted Marshmallow and Shoestring Fries
Marshmallow Fluff
3/4 cup granulated sugar
a pinch of salt
1/2 cup Aquafaba
1 teaspoon vanilla bean paste
Shoestring Fries
1/2 pound Yukon gold potatoes, cut into matchsticks
frying oil of your choice
flaked sea salt
Malted Milk Chocolate Banana Nice Cream Milkshake
1/4 cup non dairy milk (almond, oat, etc.)
1 tablespoon malt powder
1 tablespoons cocoa powder
3 frozen banana
Shoestring Fries:
Thinly slice your potatoes and cut into small strips. Place in a large bowl and rinse until the water runs clear. Drain the water then cover with plastic wrap and place in the microwave for 3 minute.
Meanwhile, heat the cooking oil of your choice in a large heavy bottom pan or dutch oven until it reach 350 degrees.
Take the fries from the microwave and place them in a single layer between paper towels. Once dry, place in batches in the hot oil until golden brown. Sprinkle with salt when fresh from the fryer.
Milkshake:
Add the ingredients to the bowl of a blender or food process and puree until smooth.
Marshmallow fluff:
Add the Aquafaba to the bowl of a stand mixer fitted with the whisk attachment. Whisk on high speed until it reaches soft peaks. Then, gradually add in the granulated sugar and continue to beat until stiff peaks are reach (about 8 minutes). Then add in vanilla and salt and mix until combined.
The marshmallow fluff can keep in an airtight container for about a week. I have found that it is best to use the fluff right after it is prepared if you would like to pipe with it. After sitting it can become loose and not hold it’s shape as well.
